She perfected her own award-winning Shotgun Willie Chili, which won the World Championship Chili Cookoff in 1985. But her impact didn’t stop there. When ICS founder Carroll Shelby personally asked Carol to lead the International Chili Society (ICS), Carol became its guiding force, eventually owning the organization and earning the title of "Chili Queen".

Her dedication shaped ICS and the World Championship Chili Cookoff for decades. Her influence was so profound that she was honored multiple times by World Food Championships founder Mike McCloud, who later acquired ICS in 2020. Carol’s passion, leadership, and warmth will never be forgotten. Her legacy lives on in every simmering chili pot and the countless friendships she helped forge.
